Vitamin C is an essential dietary nutrient. It is a reducing agent (electron donor) that acts as an antioxidant and as a cofactor for various enzymes. Vitamin C has a role in the stimulation of neutrophil chemotaxis; lipid and protein metabolism; and the synthesis of collagen, carnitine, neurotransmitters, prostaglandins, and nitric oxide. It also facilitates the absorption of iron. A deficiency of vitamin C can lead to the development of scurvy.
